- Preheat oven to 400°F (200°C).
- Place cauliflower florets in a large mixing bowl. Drizzle over olive oil and sprinkle with garlic powder.
- Use your hands to mix, ensuring the oil coats all the florets.
- Sprinkle over chipotle powder, salt, and pepper. Toss everything together.
- Spread the cauliflower evenly on a baking sheet. Roast for about 25 minutes, tossing once halfway through, until the edges are caramelized and the cauliflower is tender.
- Remove from the oven, push the cauliflower together, and drizzle with fresh lime juice.
- Sprinkle with cilantro and serve hot!
