- Mash bananas in a mixing bowl until very smooth.
- Whisk in the eggs until the mixture is well blended.
- Stir in oats and let the batter rest for 5–10 minutes.
- Heat a non-stick pan over medium-low heat. Pour small circles of batter and cook for 2–3 minutes per side.
Notes
Mash your bananas very well for the best texture. For added protein, stir in a teaspoon of chia or a scoop of protein powder. Freeze extras in a single layer for quick reheats.
