Preparation
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large mixing bowl, combine the yogurt, sugar, and eggs. Whisk until smooth.
  3. Sift in the all-purpose flour and baking powder, then add the vanilla extract. Gently mix until just combined.
  4. Transfer the batter into the prepared cake pan, smoothing the top.
Baking
  1. Bake the cake in the preheated oven for 30-35 minutes. It’s done when a toothpick inserted in the center comes out clean.
Cooling & Serving
  1. Allow the cake to cool in the pan for a few moments before transferring it to a wire rack. Serve warm or at room temperature.

Notes

For additional flavor, add lemon zest or berries to the batter. Store the cake in an airtight container at room temperature for up to three days, or refrigerate for about a week. The cake can be frozen for up to three months; thaw overnight in the refrigerator.
