Phase 1 – Prep
- Blend base ingredients: Place the lemon juice, tahini, and salt in a food processor. Process until the mixture resembles peanut butter.
- Add ice water: Stream in the ice water while processing until smooth and creamy.
- Incorporate chickpeas: Add the chickpeas and blend until smooth and uniform.
- Taste and adjust: Adjust salt and lemon to taste, keeping in mind it will thicken in the fridge.
Phase 2 – Cook
- Heat olive oil in a skillet over medium heat.
- Cook chickpeas until sizzling, then remove with a slotted spoon.
Phase 3 – Serve
- Season chickpeas with spices and serve on top of the hummus.
Notes
Store in an airtight container in the fridge for up to a week. You can freeze it for up to three months.
