  • 1/2 cup ice water Ensures a smoothly blended texture.
  • 1 cup cooked chickpeas The primary ingredient, offering protein and fiber.
  • 1 tbsp olive oil Infuses richness and smoothness.
Toppings
  • 1 tsp flaky sea salt Provides additional flavor depth.

Method
 

Phase 1 – Prep
  1. Blend base ingredients: Place the lemon juice, tahini, and salt in a food processor. Process until the mixture resembles peanut butter.
  2. Add ice water: Stream in the ice water while processing until smooth and creamy.
  3. Incorporate chickpeas: Add the chickpeas and blend until smooth and uniform.
  4. Taste and adjust: Adjust salt and lemon to taste, keeping in mind it will thicken in the fridge.
Phase 2 – Cook
  1. Heat olive oil in a skillet over medium heat.
  2. Cook chickpeas until sizzling, then remove with a slotted spoon.
Phase 3 – Serve
  1. Season chickpeas with spices and serve on top of the hummus.

Notes

Store in an airtight container in the fridge for up to a week. You can freeze it for up to three months.
