Preparation
  1. Grill or boil the corn until cooked, about 5-7 minutes for fresh corn. The kernels should be bright and tender.
  2. In a bowl, mix together the mayonnaise, lime juice, chili powder, and a pinch of salt.
  3. Once the corn is cooked, generously slather the mixture onto each ear.
  4. Sprinkle the crumbled cotija cheese on top while the mixture is still warm, allowing it to melt slightly.

Notes
