Ingredients
  

Pizza Base
  • 2 pieces Flour or corn tortillas Flour tortillas work best, but corn tortillas offer great crunch.
Sauce and Cheese
  • 1/2 cup Pizza or pasta sauce Store-bought is fine, or you can make your own.
  • 3 tablespoons Grated Parmesan cheese Nutritional yeast can be used for a vegan option.
  • 1 cup Shredded mozzarella cheese Goat cheese or dairy-free cheese can be substituted.
Toppings
  • 20 slices Pepperoni Feel free to add any assortment of toppings like olives, mushrooms, or bell peppers.

Method
 

Preparation
  1. Preheat the oven to 425°F (218°C) and arrange one rack in the center position.
  2. Place tortillas on a flat surface.
  3. Spoon approximately 1/4 cup (63g) of the sauce onto each tortilla and spread evenly, leaving a small margin around the edges.
  4. Sprinkle approximately 1½ tablespoons (8.5g) of Parmesan cheese on each pizza.
  5. Follow with 1/4 cup (56g) of shredded mozzarella on each pizza.
  6. Top with pepperoni and your desired toppings.
Cooking
  1. Carefully place pizzas in the oven directly on the rack and bake for 5 minutes, or until golden and crisp.
  2. Remove from the oven and let cool a few minutes before cutting and serving.

Notes

Serve immediately after baking for best results. Leftovers can be stored in an airtight container in the fridge for up to 2 days or frozen for later use. Reheat in the oven or toaster oven to regain crispy texture.
