Ingredients
  

For the crust
  • 11 full-sheet 11 full-sheet graham crackers
  • 1/2 cup 1/2 cup salted macadamia nuts (roasted) Can substitute with pecans or walnuts
  • 2 tablespoons 2 tablespoons granulated sugar
  • 5 tablespoons 5 tablespoons unsalted butter, melted
For the filling
  • 28 ounces 28 ounces full-fat sweetened condensed milk
  • 1 cup 1 cup key lime juice Freshly squeezed yields the best flavor
  • 4 large 4 large egg yolks
  • 1 teaspoon 1 teaspoon key lime zest For extra flavor
For garnish
  • Garnish: lime zest, quartered lime slices, macadamia nuts, whipped cream, or meringue topping

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C).
  2. In a food processor, pulse graham crackers and macadamia nuts into coarse crumbs. A few larger pieces are okay. Pour into a medium bowl and stir in the sugar and melted butter until combined.
  3. Pat the mixture into an ungreased 9-inch pie dish, pressing down firmly to make the crust.
  4. Pre-bake the crust for 8 minutes. Remove and keep the oven on.
Filling
  1. In a mixing bowl, whisk together sweetened condensed milk, lime juice, and egg yolks. Add the lime zest and give it a final whisk.
  2. Pour the filling into the warm crust.
  3. Bake the pie for 18-20 minutes until only slightly jiggly in the center.
  4. Remove and cool completely on a wire rack. Chill for at least 1 hour before serving.
  5. Garnish as desired and enjoy!

Notes

Use fresh lime juice for the best flavor. Store leftovers in the fridge for up to a week. Chilling enhances the flavor!
