Preparation
- Preheat the oven to 350°F (177°C).
- In a food processor, pulse graham crackers and macadamia nuts into coarse crumbs. A few larger pieces are okay. Pour into a medium bowl and stir in the sugar and melted butter until combined.
- Pat the mixture into an ungreased 9-inch pie dish, pressing down firmly to make the crust.
- Pre-bake the crust for 8 minutes. Remove and keep the oven on.
Filling
- In a mixing bowl, whisk together sweetened condensed milk, lime juice, and egg yolks. Add the lime zest and give it a final whisk.
- Pour the filling into the warm crust.
- Bake the pie for 18-20 minutes until only slightly jiggly in the center.
- Remove and cool completely on a wire rack. Chill for at least 1 hour before serving.
- Garnish as desired and enjoy!
Notes
Use fresh lime juice for the best flavor. Store leftovers in the fridge for up to a week. Chilling enhances the flavor!
