Preparation
- Preheat your air fryer to 400 degrees Fahrenheit.
- Rinse the fingerling potatoes and dry them with a towel. Cut them in half lengthwise and transfer to a large bowl.
- Pour in the olive oil, add minced garlic, 1/4 teaspoon of kosher salt, and lemon pepper seasoning. Mix together until the potatoes are well-coated.
Cooking
- Lightly coat the air fryer basket with oil to prevent sticking.
- Arrange the potatoes in a single layer in the basket, ensuring they do not overlap.
- Cook the potatoes at 400 degrees Fahrenheit for 14 minutes, shaking the basket every 5 minutes for even cooking.
- Check for doneness and adjust cooking time as needed.
Serving
- Once cooked, sprinkle fresh parsley and Parmesan cheese over the potatoes and mix well.
- Serve hot with a dip made from sour cream, minced garlic, lemon juice, and chives. Refrigerate the dip for 10 minutes before serving.
Notes
For meal prep, store un-cooked potatoes in an airtight container for up to two days. Cooked potatoes can be stored in the refrigerator for up to four days.
