Phase 1 - Prep
- Combine the red onion, scallions, green pepper, garlic, olive oil, chopped pineapple, pineapple juice, soy sauce, brown sugar, ginger, white pepper, allspice, cinnamon, thyme, and nutmeg in a blender. Blend until smooth to create the marinade.
- Place the cleaned and dried chicken wings in a large mixing bowl.
- Pour the marinade over the wings and toss thoroughly to coat. Let them marinate for at least 15 minutes, or up to 4 hours in the refrigerator for deeper flavors.
Phase 2 - Cook/Assemble
- Preheat your air fryer to 380°F (193°C).
- Lightly spray the air fryer basket with cooking spray to prevent sticking.
- Arrange the marinated chicken wings in a single layer in the basket, making sure they are not overcrowded.
- Cook the wings for about 25-30 minutes, turning halfway through for even cooking, until they are golden brown and crisp (internal temperature should reach 165°F / 74°C).
Phase 3 - Serve
- Carefully remove the chicken wings from the air fryer and place them on a serving platter.
- If desired, sprinkle with additional Grace Jamaican dried jerk seasoning for extra flavor.
- Serve hot with your favorite dipping sauce and sides such as fresh veggies or a quinoa salad for a complete meal.
Notes
Marinating for longer enhances flavor; do not overcrowd the air fryer for optimal crispiness.
