Ingredients

For the Marinade
  • 1/2 cup Red Onion adds sweetness and depth to the marinade.
  • 2 pieces Scallions offers a fresh, mild onion flavor.
  • 1 piece Green Pepper imparts a subtle sweetness; for heat, use scotch bonnet peppers.
  • 2 cloves Garlic provides a warm, aromatic flavor.
  • 1 tbsp Olive Oil helps the marinade cling and enhances moisture.
  • 1 cup Chopped Fresh Pineapple adds a sweet, tropical note to balance spices.
  • 3 oz Pineapple Juice intensifies the sweetness in the marinade.
  • 1/2 cup Soy Sauce enriches the marinade with umami; substitute with Tamari for gluten-free.
  • 3 tbsp Brown Sugar caramelizes and balances the savory elements.
  • 1 tbsp Fresh Ginger lends a zesty, spicy kick to the mix.
  • 2 tsp White Pepper adds mild heat.
  • 1 tbsp Ground Allspice provides that classic jerk flavor profile.
  • 1 tsp Cinnamon enhances warmth and complexity.
  • 1 tsp Dried Thyme brings in a herby dimension.
  • 1 tsp Nutmeg rounds out the spices with a warm finish.
Main Ingredients
  • 2.5 lbs Fresh Chicken Wings the main protein source, juicy and flavorful.
  • Cooking Spray Cooking Spray for a crispy finish; avocado or olive oil cooking spray recommended.
  • Optional Grace Jamaican Dried Jerk Seasoning for an extra kick before serving.

Method

Phase 1 - Prep
  1. Combine the red onion, scallions, green pepper, garlic, olive oil, chopped pineapple, pineapple juice, soy sauce, brown sugar, ginger, white pepper, allspice, cinnamon, thyme, and nutmeg in a blender. Blend until smooth to create the marinade.
  2. Place the cleaned and dried chicken wings in a large mixing bowl.
  3. Pour the marinade over the wings and toss thoroughly to coat. Let them marinate for at least 15 minutes, or up to 4 hours in the refrigerator for deeper flavors.
Phase 2 - Cook/Assemble
  1. Preheat your air fryer to 380°F (193°C).
  2. Lightly spray the air fryer basket with cooking spray to prevent sticking.
  3. Arrange the marinated chicken wings in a single layer in the basket, making sure they are not overcrowded.
  4. Cook the wings for about 25-30 minutes, turning halfway through for even cooking, until they are golden brown and crisp (internal temperature should reach 165°F / 74°C).
Phase 3 - Serve
  1. Carefully remove the chicken wings from the air fryer and place them on a serving platter.
  2. If desired, sprinkle with additional Grace Jamaican dried jerk seasoning for extra flavor.
  3. Serve hot with your favorite dipping sauce and sides such as fresh veggies or a quinoa salad for a complete meal.

Notes

Marinating for longer enhances flavor; do not overcrowd the air fryer for optimal crispiness.
