- In a blender, combine the red onion, scallions, green pepper, garlic, olive oil, fresh pineapple, pineapple juice, soy sauce, brown sugar, fresh ginger, white pepper, ground allspice, cinnamon, dried thyme, and nutmeg.
- Blend until smooth and well combined.
- Place the chicken wings in a large bowl. Pour the marinade over the wings, ensuring they are completely coated.
- Cover and let them marinate in the refrigerator for at least 1 hour (or up to overnight for maximum flavor).
Cooking
- Preheat your air fryer to 400°F (200°C).
- Remove the wings from the marinade and shake off excess liquid to avoid sogginess.
- Lightly spray the air fryer basket with cooking spray.
- Arrange the wings in a single layer in the basket, avoiding overcrowding for even cooking.
- Cook for 25-30 minutes, flipping halfway through, until the wings are golden brown and crispy.
Serving
- Once cooked, remove the wings and let them rest for a few minutes.
- If desired, sprinkle with Grace Jamaican dried jerk seasoning for an extra kick.
- Serve hot with your favorite dipping sauce, garnished with fresh herbs or lime wedges.
Notes
For extra crispy wings, dry the wings well before marinating. Store leftovers in an airtight container in the refrigerator for up to 3 days. You can freeze cooked wings for up to 3 months. For best results, reheat in an oven at 350°F (175°C) for about 10-15 minutes.
