Preparation
- Slice the potatoes into very thin slices, about 1/8-inch thick, using a mandoline slicer for quicker results.
- Submerge the sliced potatoes in a large bowl filled with cold water to rinse and remove excess starch.
- Dry the onion slices thoroughly using paper towels or clean kitchen towels.
- In a large bowl, combine the sliced potatoes with olive oil, salt, and pepper, tossing to ensure even coating.
Cooking
- Preheat your air fryer to 375°F.
- Arrange the potato slices in an even layer in the air fryer basket, avoiding overlap.
- Cook for 20 minutes, tossing the chips every 5 to 7 minutes for even cooking.
- Once some chips are crispy, remove them and continue cooking the remaining chips.
- If using two large potatoes, you may need to repeat the cooking process in 2-3 batches.

- Serve the potato chips warm and enjoy!
Notes
Store leftovers in an airtight container at room temperature for up to 3 days. They can be re-crisped in the air fryer.
