Preparation
- Preheat the air fryer to 400 degrees F (200 degrees C).
- In a small bowl, combine minced garlic, rosemary, salt, pepper, onion powder, and smoked paprika to mix the seasoning blend.
- Rub the roast all over with olive oil, ensuring it’s evenly coated.
- Generously coat your beef roast with the herb and spice mixture, pressing it into the surface.
Cooking
- Place the seasoned roast in the air fryer basket and cook at 400 degrees F (200 degrees C) for about 15 minutes.
- After the initial 15 minutes, reduce the air fryer temperature to 360 degrees F (180 degrees C) and continue cooking for another 15 to 17 minutes. Aim for an internal temperature of 130 degrees F (54 degrees C) for medium-rare.
- Once done, remove the roast from the air fryer and let it rest for at least 10 minutes before slicing.
Notes
For a different flavor, consider substituting rosemary with thyme or using a mix of your favorite herbs. Serve slices against the grain for tenderness. Store leftovers in an airtight container for up to 3 days. Can be frozen for later use.
