  • to taste salt and pepper Sea salt and freshly cracked pepper are ideal.
  • 1/4 cup shredded Parmesan cheese Nutritional yeast is a dairy-free alternative.
  • as needed Chopped parsley Swap for chives or dill.

Method
 

Preparation
  1. Cut the potatoes into quarters, making one-inch pieces that cook evenly.
  2. In a medium-sized bowl, combine the cut potatoes, olive oil, Italian seasoning, minced garlic, salt, pepper, and Parmesan cheese until well-coated.
Cooking
  1. Place the seasoned potatoes in the basket of your air fryer, ensuring not to overcrowd them.
  2. Cook at 400 degrees Fahrenheit for 10 minutes. Toss and continue cooking for another 8-10 minutes, or until tender inside with a crispy exterior.
  3. Garnish with chopped parsley just before serving.

Notes

For extra crunch, soak potato pieces in cold water for 30 minutes before cooking. Always shake the basket halfway through cooking for crisping.
