Ingredients
  

For the Salmon Marinade
  • 1 lb Wild Salmon, skin and pin bones removed, sliced into 1” pieces Fresh, high-quality salmon is key for taste; consider using sustainably sourced salmon.
  • 2 tbsp Soy Sauce Use tamari for gluten-free; coconut aminos can be a substitute.
  • 1 tbsp Olive Oil Can use avocado oil for a higher smoke point.
  • 1 tbsp Honey For a vegan option, use maple syrup.
  • 1 tsp Garlic Powder Fresh minced garlic can substitute; use less.
  • 1 tsp Fresh Ginger, finely minced Ground ginger works in a pinch but fresh is preferred.
  • ½ tsp Black Pepper Use white pepper for a milder touch.
  • ¼ tsp Kosher Salt Sea salt can be used as well.
For the Bowl
  • 2 cups Cooked Jasmine Rice Brown rice or cauliflower rice can be used as alternatives.
  • 2 cups Steamed Shelled Edamame Green peas can be a sweeter option.
  • 1 slice Avocado Cucumber or sautéed zucchini can be used for a low-cal option.
  • 1 medium Mango, sliced into bite-size pieces Peaches are a great swap when mango isn't in season.
  • Optional: Black Sesame Seeds & Sriracha Mayo for Garnish Replace with toasted sesame seeds and a drizzle of your favorite dressing.

Method
 

Preparation
  1. Whisk together the soy sauce, olive oil, honey, garlic powder, minced ginger, black pepper, and salt in a bowl.
  2. Pour the marinade into a sealable bag and add the salmon pieces. Shake gently to coat the salmon well.
  3. Release any excess air from the bag, reseal, and place it in the fridge for 20-30 minutes.
  4. Do not marinate longer than 30 minutes, as it might get too salty.
Cooking
  1. Preheat your air fryer to 390 degrees F and spray the cooking basket with olive oil spray.
  2. Place the marinated salmon into the air fryer basket, ensuring enough space between each piece.
  3. Air fry the salmon for 6-8 minutes, shaking the basket halfway through, until you reach your desired doneness.
Assembly
  1. In four bowls, divide the cooked rice and toppings.
  2. Top each bowl with air-fried salmon bites, and garnish with black sesame seeds and Sriracha mayo if desired.

Notes

Serve immediately for freshness, but leftovers can be easily reheated. Experiment with toppings to suit your taste.
