Ingredients
  

Mushroom Filling
  • 1.5 pounds whole cremini mushrooms Can substitute with button mushrooms.
  • 1 pound Italian sausage (mild or hot) Turkey or chicken sausage can be used as a leaner alternative.
  • 0.25 cup yellow onion (finely diced) Shallots can be used for a more delicate flavor.
  • 4 cloves garlic (minced) Garlic powder can be used as a substitute.
  • 0.25 teaspoon red pepper flakes (optional) Adjust according to spice preference.
  • 4 ounces cream cheese (softened) Low-fat cream cheese is an option.
  • 1 large egg yolk Omit for a vegan alternative.
  • 0.5 cup Parmesan cheese (finely grated) Nutritional yeast can be used as a substitute.
  • 0.25 cup panko bread crumbs Regular breadcrumbs can be used but won't be as crunchy.
  • 2 tablespoons fresh parsley (minced) Dried parsley can substitute, just use less.
  • to taste Kosher salt and black pepper You may also use garlic salt for additional flavor.

Method
 

Preparation
  1. Carefully remove mushroom stems and chop them finely; set aside.
  2. In a medium skillet, brown the sausage over medium heat until almost completely cooked.
  3. Stir in the chopped mushroom stems and onion. Sauté for 2-3 minutes, until tender.
  4. Mix in the minced garlic and red pepper flakes, and sauté for another 30 seconds, until fragrant.
  5. Drain the excess grease, then place the mixture aside to cool completely.
  6. In a medium bowl, add cream cheese and egg yolk, stirring well to combine.
  7. Stir in the Parmesan cheese, bread crumbs, and parsley into the cream cheese mixture.
  8. Fold in the cooled sausage and onion mixture until well mixed. Season generously with salt and pepper.
  9. Use a spoon to generously fill each mushroom cap with the stuffing.
Cooking
  1. Spray the inner basket of the air fryer with cooking spray.
  2. Place the stuffed mushrooms in the basket and air fry at 390 degrees for 5-7 minutes, or until golden on top.

Notes

Ensure not to overstuff the mushrooms and preheat the air fryer for best texture. Serve with balsamic reduction for added flavor.
