Preparation
- Carefully remove mushroom stems and chop them finely; set aside.
- In a medium skillet, brown the sausage over medium heat until almost completely cooked.
- Stir in the chopped mushroom stems and onion. Sauté for 2-3 minutes, until tender.
- Mix in the minced garlic and red pepper flakes, and sauté for another 30 seconds, until fragrant.
- Drain the excess grease, then place the mixture aside to cool completely.
- In a medium bowl, add cream cheese and egg yolk, stirring well to combine.
- Stir in the Parmesan cheese, bread crumbs, and parsley into the cream cheese mixture.
- Fold in the cooled sausage and onion mixture until well mixed. Season generously with salt and pepper.
- Use a spoon to generously fill each mushroom cap with the stuffing.
Cooking
- Spray the inner basket of the air fryer with cooking spray.
- Place the stuffed mushrooms in the basket and air fry at 390 degrees for 5-7 minutes, or until golden on top.
Notes
Ensure not to overstuff the mushrooms and preheat the air fryer for best texture. Serve with balsamic reduction for added flavor.
