Method
 

Preparation
  1. Preheat your air fryer to 400°F.
  2. In a large bowl, combine the sweet potato matchsticks with oil, salt, garlic powder, and paprika. Toss until every piece is beautifully coated.
Cooking
  1. Lightly coat the air fryer basket with cooking spray. Arrange your fries in a single layer, avoiding stacking.
  2. Air fry for 10 minutes, shaking the basket halfway through. Continue cooking for 3 to 5 minutes until the fries are golden brown and crispy.
  3. When done, remove the fries and repeat for any remaining batches if necessary. Serve hot and immediately for the best texture.
Dipping Sauce
  1. In a small bowl, mix the mayo, ketchup, chili powder, paprika, and salt until smooth.

Notes

Soak sweet potato matchsticks in water for 30 minutes before cooking for added crispiness. Store any leftover fries in an airtight container in the fridge for up to three days. Reheat them in the air fryer to restore that crunchy texture.
