Vegetables

Method
 

Preparation
  1. Preheat the air fryer. Set the air fryer to the highest temperature setting and let it preheat for about 5 minutes.
  2. In a large bowl, mix broccoli florets, cremini mushrooms, sliced carrots, zucchini, red bell pepper, and red onion with olive oil, balsamic vinegar, minced garlic, Italian seasoning, garlic powder, salt, and pepper.
Cooking
  1. Place the seasoned vegetable mixture into the hot air fryer basket. If necessary, cook the vegetables in two batches to ensure even cooking.
  2. Set the air fryer temperature to 390°F and allow the vegetables to cook for 7-8 minutes.
  3. Halfway through cooking, shake the basket to ensure even exposure to hot air.
  4. After the initial cooking time, sprinkle the vegetables with parmesan cheese if desired.
  5. Air fry the vegetables for an additional 3-8 minutes until they are tender to your liking, stirring halfway through for an even cook.
  6. Check for doneness by piercing the vegetables with a fork, they should be soft yet still have a bit of crunch.
  7. Place any leftovers in a covered container and store in the fridge for up to 3 days.

Notes

Cut vegetables into uniform sizes for even cooking. Avoid overcrowding the air fryer for best results. Leftovers can be reheated in the air fryer for maximum crispness.
