- Step 1: Slice the zucchini into 1/8-inch thick rounds.
- Step 2: Transfer to a colander, salt generously, and leave for 15-30 minutes to draw out moisture.
- Step 3: Rinse the zucchini and transfer to a plate lined with paper towels. Press to remove as much moisture as possible.
Cooking
- Step 4: In a large bowl, add zucchini slices, olive oil, garlic, onion powder, and black pepper. Toss to coat evenly.
- Step 5: Preheat the air fryer to 350°F.
- Step 6: Arrange zucchini slices in a single layer in the air fryer basket. Air fry for 10-11 minutes or until crispy, flipping halfway through.
Serving
- Step 7: Transfer the crispy zucchini to a serving bowl and sprinkle with parmesan cheese and parsley. Serve and enjoy!
