Ingredients

Main Ingredients
  • 4 slices sandwich bread Use your favorite type; sourdough adds unique flavor.
  • 1 tablespoon butter, softened Use olive oil for a vegan option.
  • 1 tablespoon Dijon-style mustard This adds tang; you may substitute with whole grain mustard.
  • 1/4 cup shredded cheddar cheese For a non-dairy option, try nut-based cheese shreds.
  • 5 ounces Brie cheese, sliced If unavailable, camembert works wonderfully.
  • 1 medium apple, thinly sliced Go for Granny Smith for tartness or Honeycrisp for sweetness.
  • 2 tablespoons fresh thyme leaves Optional substitution is dried thyme (use half the amount).

Method

Preparation
  1. Begin by placing the bread slices on a flat surface.
  2. Spread butter on one side of each slice then flip them over.
  3. On the unbuttered sides, spread the Dijon mustard liberally.
  4. Layer two slices of bread with shredded cheddar, Brie, apple slices, and thyme leaves.
  5. Top these with the remaining slices of bread, ensuring the buttered sides are outward.
Cooking
  1. Heat a skillet over medium heat and add the sandwiches.
  2. Cook for 3 to 5 minutes per side while pressing gently with a spatula until golden.
  3. Once the cheese melts, remove from heat, slice in half, and serve hot.

Notes

Serve with a side of tomato soup for the ultimate comfort food experience. Leftovers can be refrigerated for up to two days or frozen for up to a month without butter. Reheat in a skillet for best results.
