Ingredients
  

  • 1 ½ cups peeled and chopped apples (about 2 medium apples, ½-inch chunks)
  • cup packed light or dark brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 1 ¾ cups all-purpose flour, spooned and leveled
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened to room temperature
  • ¾ cup granulated sugar
  • 2 large eggs, at room temperature
  • cup unsweetened applesauce, at room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup whole milk, at room temperature

Method
 

  1. Adjust oven rack to the lower third position and preheat to 350°F (177°C). Grease a 9×5-inch loaf pan with nonstick spray.
  2. In a small bowl, toss together the chopped apples, brown sugar, and cinnamon. Set aside.
  3. In a large bowl, whisk together flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. In a separate bowl, beat butter and granulated sugar until creamy, about 2 minutes. Add eggs one at a time, then mix in applesauce and vanilla. Mixture may appear curdled.
  5. With mixer on low, add dry ingredients while pouring in milk. Mix until just combined. Batter will be sticky and thick.
  6. Spread half the batter into prepared pan. Spoon apple mixture on top, then spread remaining batter. Run a knife through center to swirl.
  7. Bake for 60–75 minutes. Loosely cover with foil at 30 minutes to prevent over-browning. Test doneness with toothpick.
  8. Cool completely in pan on a wire rack before slicing. Bread may fall apart if sliced warm.

Notes

Use firm apples like Granny Smith or Honeycrisp for best texture. Make sure to cool completely before slicing, or the bread may fall apart.
