  • 1 lb top sirloin steak Sliced thinly against the grain; flank steak or chicken can be substitutes.
  • 8 oz mushrooms Sliced; use any variety like button or shiitake.
  • 1 medium onion Sliced; red onion can add color.
  • 1 medium zucchini Sliced diagonally; yellow squash can be colorful swap.
  • 1 red bell pepper Any bell pepper can be used.
  • 1 teaspoon fresh ginger, grated Substitute with ground ginger if necessary.
  • 1 clove garlic Minced; garlic powder can be used in a pinch.
  • 1/2 teaspoon orange zest Can be replaced with lemon zest for a different flavor.
  • 3 tablespoons barbecue sauce Choose your favorite or make your own.
  • 3 tablespoons maple syrup Honey can be an alternative.
  • 2 tablespoons low-sodium soy sauce Coconut aminos can work for gluten-free.
  • 1 to 2 teaspoons rice vinegar White vinegar is an acceptable substitute.
  • 3 tablespoons neutral cooking oil Vegetable oil or canola oil are suitable.
  • 1/2 tablespoon sesame seeds Sprinkle before serving for texture.

Method
 

Preparation
  1. In a small bowl, whisk together barbecue sauce, maple syrup, soy sauce, and rice vinegar. Set aside.
  2. Heat a large skillet or wok over high heat. Add 1 tablespoon of oil. Sear the beef in a single layer for 2 to 3 minutes, undisturbed. Stir and cook for an additional 2 minutes, lightly seasoning.
  3. Add ginger, garlic, and orange zest; stir-fry for 1 minute to release fragrances.
  4. Pour 3 to 5 tablespoons of the prepared sauce over the beef. Toss and cook for 1 minute until fully coated. Transfer to a plate and keep warm.
  5. Add another tablespoon of oil to the skillet. Cook mushrooms for about 5 minutes until golden, then transfer to the plate.
  6. Add the remaining oil and stir-fry onion, zucchini, and bell pepper for 7 to 8 minutes until tender-crisp.
  7. Return the beef and mushrooms to the pan, adding more sauce if desired. Toss briefly until everything is heated through.
  8. Sprinkle with sesame seeds and serve over a bed of steamed rice or noodles.

Notes

For a richer flavor, marinate the beef in the sauce for 30 minutes before cooking. Ensure your skillet is very hot for a proper sear.
