- In a small bowl, whisk together barbecue sauce, maple syrup, soy sauce, and rice vinegar. Set aside.
- Heat a large skillet or wok over high heat. Add 1 tablespoon of oil. Sear the beef in a single layer for 2 to 3 minutes, undisturbed. Stir and cook for an additional 2 minutes, lightly seasoning.
- Add ginger, garlic, and orange zest; stir-fry for 1 minute to release fragrances.
- Pour 3 to 5 tablespoons of the prepared sauce over the beef. Toss and cook for 1 minute until fully coated. Transfer to a plate and keep warm.
- Add another tablespoon of oil to the skillet. Cook mushrooms for about 5 minutes until golden, then transfer to the plate.
- Add the remaining oil and stir-fry onion, zucchini, and bell pepper for 7 to 8 minutes until tender-crisp.
- Return the beef and mushrooms to the pan, adding more sauce if desired. Toss briefly until everything is heated through.
- Sprinkle with sesame seeds and serve over a bed of steamed rice or noodles.
Notes
For a richer flavor, marinate the beef in the sauce for 30 minutes before cooking. Ensure your skillet is very hot for a proper sear.
