Preparation
- Preheat your oven to 200C/400F.
- In a mixing bowl, combine minced ginger, minced garlic, cumin, cinnamon, garam masala, ground coriander, smoked paprika, salt, olive oil, and plain yogurt.
- Pat the chicken dry with paper towels and add it to the bowl with the marinade. Toss well until every piece is coated.
- Cover and let the chicken marinate in the fridge for up to one day or let it sit at room temperature for 10 minutes.
- Line two wire racks with tin foil and place the marinated chicken on the racks after removing excess marinade.
Cooking
- Place the racks in the preheated oven and bake for 20-25 minutes until the chicken begins to char and reaches an internal temperature of 165F.
- Allow the chicken to rest for 5 minutes before serving.
Notes
For best flavor, consider marinating the chicken the night before. Serve with basmati rice or warm naan bread.
