Ingredients
  

For the Marinade
  • 1 inch ginger (minced) Adds a refreshing zing to the marinade.

  • 1 teaspoon cinnamon Sweetness adds complexity to the flavor profile.
  • 1 teaspoon garam masala The quintessential spice blend for depth.
  • 1 teaspoon ground coriander Adds a slightly citrusy flavor.
  • 1 teaspoon salt Essential for bringing out all the flavors.
  • 1 teaspoon smoked paprika Enhances the smoky flavor without grilling.
  • 1 tablespoon olive oil Introduces healthy fats while aiding in marination.
  • 1 cup plain yogurt Acts as the marinade base and tenderizes the chicken.
For the Chicken
  • 2 pounds chicken quarters Or a mix of thighs and drumsticks to ensure juicy and flavorful results.

Method
 

Preparation
  1. Preheat your oven to 200C/400F.
  2. In a mixing bowl, combine minced ginger, minced garlic, cumin, cinnamon, garam masala, ground coriander, smoked paprika, salt, olive oil, and plain yogurt.
  3. Pat the chicken dry with paper towels and add it to the bowl with the marinade. Toss well until every piece is coated.
  4. Cover and let the chicken marinate in the fridge for up to one day or let it sit at room temperature for 10 minutes.
  5. Line two wire racks with tin foil and place the marinated chicken on the racks after removing excess marinade.
Cooking
  1. Place the racks in the preheated oven and bake for 20-25 minutes until the chicken begins to char and reaches an internal temperature of 165F.
  2. Allow the chicken to rest for 5 minutes before serving.

Notes

For best flavor, consider marinating the chicken the night before. Serve with basmati rice or warm naan bread.
