Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large oven-proof skillet, add the olive oil and place the chicken thighs. Season generously with salt and pepper.
Cooking
  1. Cook the chicken over medium-high heat until golden brown, about 4 minutes per side.
  2. Once browned, add the minced garlic and cook until fragrant, approximately 1 minute.
  3. Pour in the lime juice and sprinkle cumin and smoked paprika over the chicken.
  4. Transfer the skillet to the preheated oven and bake for 15 to 20 minutes until the chicken reaches an internal temperature of 165°F (74°C).
Serving
  1. Remove from the oven and garnish with fresh cilantro. Serve immediately with optional lime wedges.

Notes

Allow the chicken to come to room temperature for about 15 minutes before cooking for even results. Consider broiling for extra crispy skin at the end of cooking. Experiment with lime juice and spices to suit personal preferences.
