  • 2 tablespoons Lemon Juice brightens and enhances the dish
  • 2 cloves Garlic infuses with aromatic goodness
  • 1/4 cup Parsley fresh herb to elevate flavor
  • 1 teaspoon Salt essential for enhancing the fish’s natural taste
  • 1 teaspoon Pepper adds a gentle kick

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking dish with parchment paper for easy cleanup.
  3. In a small bowl, combine olive oil, lemon juice, minced garlic, chopped parsley, salt, and pepper.
  4. Place the fresh cod in the baking dish.
Cooking
  1. Drizzle the prepared olive oil mixture over the cod, ensuring it's well-coated.
  2. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and is opaque.
  3. Check doneness at the thickest part of the fish; it should reach an internal temperature of 145°F (63°C).
Serving
  1. Remove the baked cod from the oven and let it rest for a few minutes.
  2. Serve with a sprinkle of additional parsley and a wedge of lemon for garnish.

Notes

Ensure your cod is completely thawed before cooking for even doneness. Pair with roasted vegetables for a complete, macro-balanced meal. Store leftovers in an airtight container for up to 3 days.
