Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, combine the mashed bananas, eggs, honey or maple syrup, milk, and vanilla extract.
  4. Stir the wet ingredients into the dry ingredients until combined.
  5. If desired, fold in your choice of optional add-ins.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 25-30 minutes or until set and lightly golden on top.
  8. Allow to cool before cutting into bars and serving.

Notes

Keep leftovers in an airtight container at room temperature for up to three days. For longer freshness, refrigerate. These bars freeze well for up to three months.
