  • 1 head cauliflower, cut into florets Look for florets that are firm to the touch and devoid of blemishes.
For the Glaze
  • 1/4 cup orange juice Freshly squeezed orange juice adds more flavor than store-bought versions.
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup Use maple syrup for a vegan option.
  • 1 tablespoon soy sauce Coconut aminos can be used for a gluten-free option.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Zest of 1 orange orange zest

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the orange juice, olive oil, honey (or maple syrup), soy sauce, garlic powder, onion powder, salt, pepper, and orange zest.
  3. Add the cauliflower florets to the bowl and toss until they are evenly coated with the glaze.
  4. Spread the cauliflower on a baking sheet in a single layer.
  5. Place the baking sheet in the preheated oven and roast for 25-30 minutes, flipping halfway through.
  6. Serve hot as an appetizer or side dish.

Notes

For added depth of flavor, let the coated cauliflower sit for 10 minutes before baking to marinate slightly. To make it a meal, serve with grilled chicken or chickpeas.
