Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, coat the bottom with olive oil.
  3. Season the chicken breasts with spices for added flavor.
  4. Spread the salsa evenly over the chicken.
Cooking
  1. Bake the chicken in the preheated oven for 25-30 minutes.
  2. Check the internal temperature of the chicken; it should reach 165°F (74°C).
  3. During the last 5 minutes, sprinkle cheddar cheese on top and continue baking until melted.
Serving
  1. Remove from the oven and let the chicken rest for a few minutes.
  2. Slice and serve the chicken with extra salsa if desired.
  3. Pair with your favorite side dishes or over a bed of rice.

Notes

For extra tenderness, marinate chicken in olive oil and spices for a couple of hours before cooking. Use fresh salsa for a brighter flavor. Letting the chicken rest after cooking allows the juices to redistribute. Store leftovers in airtight containers to maintain freshness.
