Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Cut the boneless chicken breast into 1-inch cubes.
  4. In a large mixing bowl, combine the paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.
  5. Add chicken cubes to the bowl and coat well with the spice blend.
  6. Drizzle avocado oil over the seasoned chicken and mix to thoroughly coat.
Cooking
  1. Arrange the coated chicken bites in a single layer on the prepared baking sheet.
  2. Spray tops of chicken bites with avocado oil cooking spray.
  3. Place small pieces of butter on top of the chicken.
  4. Bake for 18-22 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
  5. Broil for an additional 1-2 minutes for extra crispiness, watching carefully.
Serving
  1. Let the chicken bites rest for 5 minutes.
  2. Transfer to a serving platter and garnish with parsley if desired.
  3. Serve warm or cool for meal prep.

Notes

For less heat, reduce cayenne. Marinate the chicken in spices for deeper flavor. Store leftovers in an airtight container for up to 4 days.
