Preparation
- Preheat your oven to 400 F.
- In a baking dish, combine the cherry or grape tomatoes with the finely minced garlic. Drizzle in ⅔ of the olive oil, then sprinkle with kosher salt, ground pepper, and Italian seasoning. Toss well to combine.
- Create a well in the center of the dish and add the block of feta cheese. Drizzle the remaining olive oil on top.
Baking
- Bake for about 30 minutes.
Cooking Pasta
- In the last 10 minutes of the baking time, bring a pot of salted water to a boil and cook your chosen pasta according to package instructions. Before draining, reserve ½ cup of the pasta water.
Mixing and Serving
- Once the tomatoes and feta come out of the oven, mix them together with a fork until you attain a creamy-thick sauce.
- Toss in the cooked pasta along with the reserved pasta water, mixing to perfectly coat everything.
- Finally, garnish with the fresh herbs of your choice, and serve!
Notes
Store leftovers in an airtight container in the refrigerator. Best enjoyed within a couple of days for optimal flavor and texture. You can freeze it for about 2-3 months; thaw before reheating.
