Ingredients
  

For the pasta
  • 10 ounces pasta Choose whole grain or gluten-free pasta for options.
  • 4 cups cherry or grape tomatoes Adds natural sweetness and vibrant color.
  • 1/4 cup olive oil Provides richness; can replace with avocado oil.
  • 1/4 cup fresh parsley or basil Adds freshness and pop of color post-baking.
For flavoring
  • 4 cloves garlic (finely minced) Infuses a warm flavor; roasted garlic boosts the dish.
  • 1 teaspoon Italian seasoning Brings a lovely herb note; can substitute with dried oregano or basil.
  • kosher salt to taste Kosher salt Enhances all the natural flavors.
  • ground pepper to taste Ground pepper Enhances all the natural flavors.
  • 8 ounces block feta cheese The star of the dish, creating creaminess.

Method
 

Preparation
  1. Preheat your oven to 400 F.
  2. In a baking dish, combine the cherry or grape tomatoes with the finely minced garlic. Drizzle in ⅔ of the olive oil, then sprinkle with kosher salt, ground pepper, and Italian seasoning. Toss well to combine.
  3. Create a well in the center of the dish and add the block of feta cheese. Drizzle the remaining olive oil on top.
Baking
  1. Bake for about 30 minutes.
Cooking Pasta
  1. In the last 10 minutes of the baking time, bring a pot of salted water to a boil and cook your chosen pasta according to package instructions. Before draining, reserve ½ cup of the pasta water.
Mixing and Serving
  1. Once the tomatoes and feta come out of the oven, mix them together with a fork until you attain a creamy-thick sauce.
  2. Toss in the cooked pasta along with the reserved pasta water, mixing to perfectly coat everything.
  3. Finally, garnish with the fresh herbs of your choice, and serve!

Notes

Store leftovers in an airtight container in the refrigerator. Best enjoyed within a couple of days for optimal flavor and texture. You can freeze it for about 2-3 months; thaw before reheating.
