Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. Line a baking sheet pan with parchment paper or use a shallow baking dish.
  3. Slice the tomatoes about ½ to ¾ inch thick and place them on the lined sheet pan.
  4. Generously brush the tomato slices with olive oil.
  5. Sprinkle salt and freshly cracked pepper over the tomato slices.
  6. Top each tomato slice with grated mozzarella and parmesan cheese, and sprinkle fresh thyme.
Baking
  1. Bake the tomatoes for about 6-8 minutes, until the cheese melts and turns golden brown.
  2. Optionally, turn on the broiler for an additional 1-2 minutes for a deeper golden color.
  3. Allow the baked tomatoes to rest for a couple of minutes before garnishing with fresh thyme or chopped parsley.
  4. Serve immediately, either as a side dish, appetizer, or with toasted bread.
