Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Drizzle olive oil into a large oven-safe skillet over medium-high heat.
  3. Add the ground Italian sausage, diced onion, diced carrot, and minced garlic to the skillet. Cook until the sausage is browned and the veggies are tender.
  4. Pour in the marinara sauce and water (or broth). Stir in the chopped spinach and cook until slightly wilted.
  5. Taste and season the mixture with salt and pepper as needed.
  6. Add the fresh tortellini along with 1.5 cups of shredded mozzarella cheese and 1/4 cup of parmesan cheese. Mix to combine.
  7. Turn off the heat and evenly spread the mixture in the pan.
  8. Top with the remaining 1.5 cups of mozzarella cheese.
  9. Cover the skillet with a lid or tin foil and bake for approximately 40 minutes.
  10. Optionally, broil uncovered for a minute or two to enhance the browning, keeping an eye to avoid burning.
  11. Remove from the oven and let the casserole rest for at least 5 minutes before serving.

Notes

For a creamier texture, consider adding a splash of cream or ricotta cheese to the sauce. Use fresh herbs to add zest and flavor.
