Preparation
- Preheat the oven to 350°F (175°C).
- Drizzle olive oil into a large oven-safe skillet over medium-high heat.
- Add the ground Italian sausage, diced onion, diced carrot, and minced garlic to the skillet. Cook until the sausage is browned and the veggies are tender.
- Pour in the marinara sauce and water (or broth). Stir in the chopped spinach and cook until slightly wilted.
- Taste and season the mixture with salt and pepper as needed.
- Add the fresh tortellini along with 1.5 cups of shredded mozzarella cheese and 1/4 cup of parmesan cheese. Mix to combine.
- Turn off the heat and evenly spread the mixture in the pan.
- Top with the remaining 1.5 cups of mozzarella cheese.
- Cover the skillet with a lid or tin foil and bake for approximately 40 minutes.
- Optionally, broil uncovered for a minute or two to enhance the browning, keeping an eye to avoid burning.
- Remove from the oven and let the casserole rest for at least 5 minutes before serving.
Notes
For a creamier texture, consider adding a splash of cream or ricotta cheese to the sauce. Use fresh herbs to add zest and flavor.
