For the filling
  • 16 ounces Cream cheese Use vegan cream cheese for dairy-free.
  • 1 cup Granulated sugar Consider coconut sugar for a lower glycemic index.
  • 3 large Eggs For a vegan option, use flax eggs.
  • 1/2 cup Honey Maple syrup works as a vegan substitute.
  • 1/2 cup Sour cream Greek yogurt can be used for a lighter option.
  • 1 cup Chopped walnuts/pistachios Any nuts you have on hand will work.
  • 1 teaspoon Ground cinnamon Nutmeg works too!

Method
 

Preparation
  1. Beat cream cheese and sugar until smooth.
  2. Add eggs, honey, and sour cream until combined, then fold in nuts and spices.
Make the crust
  1. Mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  2. Bake until golden and let cool before adding filling.
Bake the cheesecake
  1. Pour the filling into the cooled crust and bake until set.
  2. Let it chill completely in the refrigerator.

Notes

Let cream cheese come to room temperature for a smoother batter. Drizzle honey over the cheesecake before serving for an artistic touch.
