  • 1 teaspoon vanilla extract Can experiment with almond extract.
  • 1 cup all-purpose flour Whole wheat flour can be used for a healthier option.
  • 1/2 cup chocolate chips Can swap with nuts or dried fruit for variation.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in the baking soda and salt.
  5. Stir in sugar, egg, and vanilla extract.
  6. Add the flour and mix until just incorporated.
  7. Fold in chocolate chips.
  8. Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
  9. Bake for 18-20 minutes, or until golden.
  10. Allow muffins to cool before serving.

Notes

To enhance flavor, add a sprinkle of cinnamon or nutmeg to the batter. Use mini chocolate chips for added chocolatey pockets.
