Preparation
  1. In a bowl, mix mashed bananas, sugar, milk, egg, and vanilla until smooth.
  2. In another bowl, combine flour, baking powder, and salt.
  3. Gradually add dry ingredients to wet ingredients, mixing until just combined.
Cooking
  1. Heat oil in a pan over medium heat.
  2. Drop batter by spoonfuls into hot oil, frying until golden brown (3-4 minutes).
  3. Drain on paper towels and roll in a sugar and cinnamon mixture if desired.

Notes
