For the Toast
  • 8 slices French bread or sourdough loaf Cut into thick slices; gluten-free bread can be used.
  • 4 tablespoons coconut oil or unsalted butter Use for frying.
  • Pure maple syrup for serving Agave syrup can be an alternative.
  • 1 banana sliced or chopped Adds a fresh touch; serve with additional fruits.
  • cup chopped pecans Swap with walnuts or omit for nut allergies.

Method
 

Preparation
  1. Place the ripe bananas, eggs, whole milk, granulated sugar, vanilla extract, cinnamon, nutmeg, and a pinch of sea salt into a food processor or a high-powered blender. Blend until smooth.
  2. Slice the bread into 1-inch thick slices.
Cooking
  1. Heat a large skillet or griddle over medium heat and add 1 tablespoon of coconut oil or butter. Allow it to melt and coat the surface.
  2. Dip each slice of bread into the banana-egg mixture, ensuring both sides are well coated. Let any excess batter drip off.
  3. Place the coated bread slices onto the hot skillet. Cook for 3-4 minutes on each side or until golden brown and slightly crispy.
  4. Continue until all bread slices are cooked, adding more oil or butter as needed.
Serving
  1. Arrange the Banana French Toast slices on a serving platter.
  2. Drizzle with pure maple syrup and top with slices of banana and chopped pecans.
  3. Add a dollop of chocolate hazelnut spread on the side, and enjoy!

Notes
