Preparation
- Place the ripe bananas, eggs, whole milk, granulated sugar, vanilla extract, cinnamon, nutmeg, and a pinch of sea salt into a food processor or a high-powered blender. Blend until smooth.
- Slice the bread into 1-inch thick slices.
Cooking
- Heat a large skillet or griddle over medium heat and add 1 tablespoon of coconut oil or butter. Allow it to melt and coat the surface.
- Dip each slice of bread into the banana-egg mixture, ensuring both sides are well coated. Let any excess batter drip off.
- Place the coated bread slices onto the hot skillet. Cook for 3-4 minutes on each side or until golden brown and slightly crispy.
- Continue until all bread slices are cooked, adding more oil or butter as needed.
Serving
- Arrange the Banana French Toast slices on a serving platter.
- Drizzle with pure maple syrup and top with slices of banana and chopped pecans.
- Add a dollop of chocolate hazelnut spread on the side, and enjoy!
Notes
Avoid skipping the soaking time for maximum flavor absorption. Use fresh or slightly stale bread for better absorption.
