Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the oats, flour, sugar, baking soda, baking powder, salt, vanilla extract, milk, and oil to the bowl. Mix until well combined. If using, fold in nuts or chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
For a heartier muffin, add 1/2 cup of shredded carrots or apple. Adjust spices for a customized flavor.
