Cooking Method
  1. Place rice and water in a medium-sized saucepan over medium-high heat, without a lid.
  2. Bring to a simmer—the edges should bubble, and the surface will foam.
  3. Place a tight-fitting lid on, then turn the heat down to medium-low (low for strong stoves).
  4. Cook for 12 minutes—DO NOT LIFT THE LID!
  5. Tilt the pan and quickly peek to ensure all water absorbed—be quick, then clamp the lid back on.
  6. Remove from heat, leave for 5 to 10 minutes with the lid on, then fluff with a fork and marvel at fluffy rice!

Notes

Avoid lifting the lid while cooking as it interrupts the steam process. Make sure to rinse rice thoroughly to prevent stickiness. For larger batches, extend cooking time as follows: about 13 minutes for 2 cups, approximately 15 minutes for 4 cups. Add spices like cardamom or bay leaves for extra flavor.
