  • 1/2 cup BBQ Sauce Use your favorite brand or homemade.
  • 1 cup Cheddar Cheese Substitute with Pepper Jack for heat.
  • 1 cup Mozzarella Cheese Try gouda for a smoky twist.
  • 4 large Tortillas Flour or corn tortillas are perfect options.
  • 1 tablespoon Olive Oil For cooking the quesadillas.

Preparation
  1. In a bowl, combine the shredded chicken and BBQ sauce until well coated.
  2. Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
Cooking Quesadillas
  1. Place one tortilla in the skillet and sprinkle half of the cheddar and mozzarella cheese evenly over it.
  2. Spread half of the BBQ chicken mixture over the cheese, then top with the remaining cheese.
  3. Cover with a second tortilla and cook for 3-4 minutes until the bottom is golden brown.
  4. Carefully flip the quesadilla, adding the remaining olive oil to the skillet, and cook for another 3-4 minutes until the second side is golden and the cheese is melted.
  5. Remove from the skillet and let it cool for a minute before slicing into wedges.
Serving Suggestions
  1. Serve with sour cream, green onions, and cilantro on the side.

Notes

Common mistakes to avoid include overfilling the quesadilla and not letting the cheese melt fully before flipping. Use a spatula to gently press down on the quesadilla while cooking for even melting. Experiment with different types of BBQ sauce to find your favorite flavor profile.
