For the Sauce

  • 1/2 cup water or low-sodium broth Adds richness; keep broth on hand for extra flavor.
  • 2 tablespoons pure honey Balances the flavors; agave syrup is a sweet alternative.
  • 1 teaspoon grated fresh ginger Brightens the dish; ground ginger can be used in a pinch.
  • 1/2 - 1 teaspoon chile garlic sauce or Sriracha Optional heat boost.

Method
 

Preparation
  1. Place the sliced beef in a shallow bowl. Sprinkle with salt, pepper, cornstarch, and rice vinegar. Toss well to coat and set aside.
  2. In a small bowl, whisk together soy sauce, water or broth, honey, garlic, ginger, chile sauce, and cornstarch.
Cooking
  1. Heat a wok or large skillet over medium-high heat. Mist with cooking spray and add 1/2 tablespoon of oil to the pan.
  2. When the oil shimmers, add half of the beef slices in a single layer and cook for 1-2 minutes on each side. Remove cooked beef to a plate.
  3. Repeat with remaining beef slices.
  4. Return the skillet to heat, mist with cooking spray, and add broccoli, bell pepper, carrots, and white parts of green onions. Cook for 5-6 minutes until tender, adding water as needed.
  5. Push veggies aside and add sauce and beef back to skillet. Cook and stir for 2 minutes.
  6. Remove from heat and stir in green parts of green onions. Serve over rice and garnish with sesame seeds if desired.

Notes

Common mistakes to avoid: Overcrowding the pan can lead to steaming rather than stir-frying. Always slice the beef against the grain to enhance tenderness. For an extra layer of flavor, toss in some toasted sesame oil at the end.
