  • 1 can Diced Tomatoes Fresh tomatoes or tomato sauce can also work.
  • 1 can Green Chiles Jalapeños can be substituted for heat.
  • 1 cup Sour Cream Greek yogurt serves as a great alternative.
  • 1 cup Cheddar Cheese Monterey jack or mozzarella melt wonderfully too.
  • 1/2 cup Parmesan Cheese Nutritional yeast is a great alternative for a vegan twist.
  • 1 tbsp Italian Seasoning Fresh herbs like basil or oregano lend freshness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook the egg noodles according to package instructions; drain.
  3. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  4. Add diced tomatoes and green chiles to the beef, simmer for about 10 minutes.
  5. In a large bowl, mix cooked noodles with sour cream and season with salt and pepper.
Assembly
  1. Layer half of the noodle mixture in a greased casserole dish.
  2. Pour the meat sauce over the noodles, then top with the remaining noodle mixture.
  3. Sprinkle cheddar, Parmesan, and mozzarella cheeses on top.
Baking
  1. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  2. Let cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Casserole can be prepared ahead of time and refrigerated—just bake when you're ready. Freezing is also an option; let it cool completely, then wrap tightly and freeze for up to three months.
