Method
 

Preparation
  1. Preheat the oven and prepare the baking pan by lining it with parchment paper.
  2. In a mixing bowl, combine flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream together butter, brown sugar, and sugar until light and fluffy.
  4. Add eggs and vanilla extract, mixing until well combined.
  5. Gradually incorporate the flour mixture into the wet ingredients, stirring until just combined.
  6. Fold in the oats until evenly distributed throughout the dough.
  7. Spread half of the cookie dough into the prepared baking pan, pressing it evenly into the bottom.
Make the Cheesecake Layer
  1. In a separate bowl, beat cream cheese and sugar together until smooth.
  2. Add an egg and mix until well blended, then fold in the white chocolate chips.
  3. Spread the cheesecake mixture over the cookie dough layer evenly.
Assembly and Baking
  1. Top with the remaining cookie dough, dropping spoonfuls over the cheesecake layer.
  2. Sprinkle chopped strawberries and blueberries on top, gently pressing them down.
  3. Bake until golden and set in the center, then cool completely before cutting into bars.

Notes

Use room temperature ingredients for an even batter. Don't overmix the dough after adding flour. Chilling the bars in the fridge after baking improves texture. Store in an airtight container for freshness.
