Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup packed light brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup mix-ins (white chocolate, semi-sweet chocolate, butterscotch chips, chopped nuts)

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment or foil.
  2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a large bowl, mix brown sugar and melted butter. Whisk in egg and vanilla until thick.
  4. Stir in dry ingredients until almost combined.
  5. Fold in 3/4 cup mix-ins; spread batter in pan and press remaining mix-ins on top.
  6. Bake 32–36 minutes until golden and a toothpick comes out clean.
  7. Cool in pan, then cut into squares.

Notes

For optimal freshness, store blondies in an airtight container. Can be frozen for up to three months.
