Ingredients

Dry Ingredients
  • 2 cups all-purpose flour Feel free to use whole wheat flour for a health-conscious version.
  • 2 tablespoons granulated sugar This adds just a touch of sweetness to balance the blueberries.
  • 1 tablespoon baking powder The leavening agent that brings your biscuits to life.
  • ½ teaspoon baking soda Works alongside the baking powder for perfect rise.
  • 1 teaspoon salt Enhances all the flavors of your ingredients.
Wet Ingredients
  • 8 tablespoons cold butter, cubed For rich flavor and flakiness; keep your butter cold for best results.
  • ½ cup milk or heavy cream Use more if needed; heavy cream provides a richer biscuit.
Main Ingredients
  • 1 cup fresh blueberries Bursting with flavor; frozen berries can be used in a pinch, but fresh is best!
  • Flour for dusting Prevents sticking when rolling out dough.

Method

Preparation
  1. Preheat your oven to 400ºF to ensure the biscuits bake evenly.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Use a whisk to mix until well combined.
  3. Using a fork or pastry blender, cut the cold butter into the flour mixture until it resembles coarse cornmeal.
  4. Make a well in the center of the flour mixture and slowly pour in the milk. Stir until the dough starts to come together but avoid overmixing. If too dry, add a bit more milk.
  5. Gently fold in the blueberries, taking care not to break them apart.
  6. Lightly flour your working surface. Turn the dough out and dust the top lightly with flour. Roll it out to about 1 inch thick.
  7. Use a round biscuit cutter to cut biscuits from the dough and place them on an ungreased baking sheet.
Baking
  1. Bake your biscuits for 15 to 16 minutes, or until the edges are golden brown.
  2. Remove them from the oven and let cool slightly on racks before serving.

Notes

For extra flavor, add a dash of vanilla extract to the milk before mixing. Experiment with different fruits like raspberries or blackberries for variety. To keep biscuits warm, cover them with a kitchen towel after baking. Store leftovers in an airtight container at room temperature for up to two days.
