For the Compote

  • 1/4 cup brown sugar Adds rich, caramel-like flavor; can be replaced with coconut sugar.
  • 1/4 cup white granulated sugar Balances sweetness; you can use honey for a natural sweetener.
  • 2 strips lemon zest Enhances brightness; use orange zest for a different twist.
  • 3 cups blueberries Fresh blueberries deliver the best taste; frozen can be used but with a different texture.
  • 1 tsp vanilla extract Optional; adds warmth.
  • 1 tbsp fresh lemon juice Adjust to taste; lime juice can be substituted.

Preparation
  1. In a saucepan, combine the water, brown sugar, and white sugar with the lemon zest strips. Bring to a boil over medium-high heat, stirring until the sugars dissolve.
  2. Once dissolved, remove the lemon zest.
  3. Stir in the blueberries and optional vanilla extract, cooking over medium heat for about 10 minutes, allowing the compote to thicken to your desired consistency.
  4. Add lemon juice to taste, stir to combine, and remove from heat.
  5. Enjoy the compote warm or cold. Store in the fridge for up to one week.

Notes

Avoid skipping the lemon juice to balance sweetness. Monitor the cooking time to prevent overcooking which may lead to a syrupy mixture. For a smoother texture, blend after cooling.
