Ingredients

Main Ingredients
  • 2 cups fresh blueberries Packed with antioxidants, they add a touch of sweetness.
  • 4 cups mixed greens Choose a blend for varied textures; spinach, arugula, and romaine work well.
  • 1 cup sliced strawberries For added sweetness and vibrant color.
  • 1 cup crumbled feta cheese Add creaminess; goat cheese can be used as a substitution.
  • 1/2 cup sliced almonds For a satisfying crunch; walnuts or pecans are excellent alternatives.
  • 1/4 cup red onion, thinly sliced A tangy bite that complements the sweetness of the fruit.
  • 2 tablespoons olive oil A healthy fat that helps absorb the vitamins from the greens.
  • 2 tablespoons balsamic vinegar Adds acidity; other vinegars can be swapped based on preference.
  • to taste salt and pepper Essential for highlighting the flavors.

Method

Preparation
  1. In a large bowl, combine the mixed greens, blueberries, strawberries, red onion, and feta cheese. Toss gently to mix without bruising the fruits.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Sprinkle sliced almonds on top before serving.

Notes

Make the salad ahead and pack it for lunch. Keep the dressing separate until serving. Serve fresh to retain the crispness of the greens and fruit. Frozen dressing is okay for later use.
