  • 1 teaspoon Vanilla extract Use pure vanilla for best results.
Blueberry Swirl Ingredients
  • 1 cup Blueberries Fresh or frozen; heat frozen to break down.
  • 1 tablespoon Cornstarch Optional for thicker swirl, dissolve in water.

Preparation
  1. Gather all your ingredients to ensure they're ready for mixing.
  2. In a bowl, mix Greek yogurt with honey or maple syrup, lemon juice, and vanilla extract until smooth.
Make the Blueberry Swirl
  1. Mash fresh blueberries or simmer frozen blueberries until they break down.
  2. Stir in cornstarch (if using) and let the mixture cool slightly.
Mold the Bites
  1. Fill ice cube trays or silicone molds halfway with the yogurt mixture.
  2. Add a swirl of blueberry compote, then top with more yogurt.
  3. Use a toothpick to create swirls.
Freeze
  1. Place molds in the freezer for at least 3 hours, or until fully solidified.

Notes

Keep in an airtight container in the freezer. They last up to two months but are likely to be eaten quickly!
