Granola Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine rolled oats, chopped nuts, honey or maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt. Mix well until all ingredients are evenly coated.
- Spread the granola mixture onto a baking sheet lined with parchment paper, ensuring it is in an even layer.
- Bake for 20-25 minutes, stirring halfway through, until golden brown. Keep an eye on it to prevent burning.
- Remove from the oven and let it cool completely; it will become crunchy as it cools.
Bowl Assembly
- In a serving bowl, add 1 cup of Greek yogurt and drizzle with honey if desired.
- Top the yogurt with a generous handful of the homemade granola and fresh blueberries.
- Sprinkle chia seeds and garnish with fresh mint leaves before serving.
Notes
Serve the bowl layered for an attractive presentation. Store yogurt and granola separately to maintain crunch.
