Preparation
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper.
Cooking
- Sear the chicken breasts in the skillet for 4-5 minutes on each side until golden brown.
- Remove the chicken from the skillet and spread Boursin cheese on top of each breast.
- In the same skillet, add minced garlic and sauté for 1 minute. Pour in chicken broth and stir to combine.
- Place the chicken back in the skillet, spooning some of the broth over the top.
- Transfer to the oven and bake for about 20 minutes, or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Let the chicken rest for a few minutes after baking for juicier results. Serve over a bed of rice or with roasted vegetables for a complete meal.
