  • 6 ounces Boursin cheese Any herb-flavored cream cheese can be used as a substitute.
  • 1 tablespoon olive oil Can substitute with butter or avocado oil.
  • 1 cup chicken broth Vegetable broth is a vegetarian alternative.
  • 1 tablespoon minced garlic Freshly minced or jarred is both effective.
  • to taste salt and pepper Experiment with herbs like thyme or rosemary for added depth.
  • for garnish fresh parsley Optional, for added freshness.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper.
Cooking
  1. Sear the chicken breasts in the skillet for 4-5 minutes on each side until golden brown.
  2. Remove the chicken from the skillet and spread Boursin cheese on top of each breast.
  3. In the same skillet, add minced garlic and sauté for 1 minute. Pour in chicken broth and stir to combine.
  4. Place the chicken back in the skillet, spooning some of the broth over the top.
  5. Transfer to the oven and bake for about 20 minutes, or until the chicken is cooked through.
  6. Garnish with fresh parsley before serving.

Notes

Let the chicken rest for a few minutes after baking for juicier results. Serve over a bed of rice or with roasted vegetables for a complete meal.
