Method
Cook the pasta
- Boil water in a large pot and add a generous pinch of salt.
- Once boiling, add the pasta and cook according to package instructions until al dente, around 8-10 minutes.
- Reserve a splash of pasta water before draining.
Heat the skillet
- While the pasta is cooking, heat 1 teaspoon of olive oil in a large skillet over medium heat.
- The oil should shimmer but not smoke.
Cook the chorizo
- Add the chorizo to the skillet and cook for about 5-7 minutes, breaking it apart with a spoon.
- Aim for browned edges and a fragrant aroma.
Add garlic and red pepper flakes
- Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.
- Keep an eye on it to prevent burning.
Incorporate broccoli
- Add the broccoli florets along with a splash of the reserved pasta water.
- Cook for another 3-4 minutes until the broccoli is tender but still vibrant green.
Combine pasta and sausage
- Add the drained pasta to the skillet, tossing everything together to coat evenly.
- If the mixture seems dry, add more reserved pasta water until desired consistency is reached.
Season and serve
- Season the dish with salt, pepper, and sprinkle with Parmesan cheese if using.
- Serve immediately and enjoy the delicious medley of flavors.
