Method
 

Cook the pasta
  1. Boil water in a large pot and add a generous pinch of salt.
  2. Once boiling, add the pasta and cook according to package instructions until al dente, around 8-10 minutes.
  3. Reserve a splash of pasta water before draining.
Heat the skillet
  1. While the pasta is cooking, heat 1 teaspoon of olive oil in a large skillet over medium heat.
  2. The oil should shimmer but not smoke.
Cook the chorizo
  1. Add the chorizo to the skillet and cook for about 5-7 minutes, breaking it apart with a spoon.
  2. Aim for browned edges and a fragrant aroma.
Add garlic and red pepper flakes
  1. Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.
  2. Keep an eye on it to prevent burning.
Incorporate broccoli
  1. Add the broccoli florets along with a splash of the reserved pasta water.
  2. Cook for another 3-4 minutes until the broccoli is tender but still vibrant green.
Combine pasta and sausage
  1. Add the drained pasta to the skillet, tossing everything together to coat evenly.
  2. If the mixture seems dry, add more reserved pasta water until desired consistency is reached.
Season and serve
  1. Season the dish with salt, pepper, and sprinkle with Parmesan cheese if using.
  2. Serve immediately and enjoy the delicious medley of flavors.

Notes
