Ingredients
  

  • 4 eggs
  • 1 cup raw broccoli florets, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 tsp garlic powder (optional)
  • olive oil or nonstick spray (for greasing)

Method
 

  1. Preheat oven to 350°F and grease a mini muffin tin.
  2. Finely chop raw broccoli florets into small, even pieces.
  3. In a bowl, whisk eggs until smooth. Stir in broccoli, cheese, and seasonings if using.
  4. Scoop mixture into mini muffin tin, filling each cup about 90% full.
  5. Bake for 15–18 minutes until set and lightly golden. Cool before serving.
